  • 2 cups Granulated sugar
  • 1 cup Brown sugar
  • 1 cup Sour cream
  • 0.25 teaspoons Salt
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1.5 cups Pecans (halved or chopped)

Directions

Step 1

Prepare a large sheet of parchment paper or a silicone baking mat on a heatproof surface for dropping the pralines.

Step 2

In a heavy-bottomed saucepan, combine granulated sugar, brown sugar, sour cream, and salt.

Step 3

Cook the mixture over medium heat, stirring constantly with a wooden spoon or heatproof spatula.

Step 4

Bring the mixture to a boil and attach a candy thermometer to the side of the pan.

Step 5

Continue cooking the mixture, stirring occasionally, until the temperature reaches 238°F (the soft-ball stage). This should take about 10-12 minutes.

Step 6

Once the mixture reaches the desired temperature, remove the saucepan from heat and stir in the butter, vanilla extract, and pecans.

Beat the mixture vigorously with a wooden spoon until it thickens and becomes creamy. This will take about 1-2 minutes.

Allow the pralines to cool and set for at least 30 minutes at room temperature.
