Ingredients

  • 6 medium Yukon Gold potatoes
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic
  • 1 cup Sour cream
  • 1 cup Cheddar cheese, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Scallions, chopped
  • 0.5 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with butter or cooking spray.

Step 2

Peel the Yukon Gold potatoes and cut them into 1-inch cubes.

Step 3

Bring a large pot of water to a boil, then add the cubed potatoes. Cook for 10-12 minutes, or until tender but not falling apart. Drain well.

Step 4

In a small skillet, melt the butter over medium heat and sauté the garlic until fragrant, about 1-2 minutes. Remove from heat.

In a large mixing bowl, combine the cooked potatoes, sour cream, sautéed garlic and butter, salt, and black pepper. Mash the potatoes gently until mostly smooth but with some small chunks for texture.
