Season the chicken breasts on both sides with salt and black pepper.
In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.
Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside on a plate.
In the same skillet, reduce the heat to medium and add the remaining olive oil and butter.
Add the sliced mushrooms to the skillet and sauté for 5-7 minutes, or until they release their liquid and turn golden brown.
Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
Sprinkle the flour over the mushrooms and stir well to coat evenly. Cook for 1 minute to remove the raw flour taste.
Slowly pour in the chicken broth while stirring, making sure no lumps form. Bring the mixture to a gentle simmer.
Lower the heat and whisk in the sour cream until smooth and creamy. Taste the sauce and adjust the seasoning with more salt and pepper, if needed.
Return the chicken breasts to the skillet, nestling them in the sauce. Cover the skillet and let the chicken simmer in the sauce for 10-12 minutes, or until fully cooked and the internal temperature reaches 165°F (74°C).
Garnish the dish with freshly chopped parsley, if desired, and serve hot over rice, mashed potatoes, or pasta.
