Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 1 cup Sour cream
  • 3 pieces Large eggs
  • 2 teaspoons Vanilla extract
  • 0.5 cups Brown sugar
  • 2 teaspoons Ground cinnamon
  • 0.5 cups Chopped pecans or walnuts (optional)
  • 0.25 cups All-purpose flour (for streusel topping)
  • 2 tablespoons Packed brown sugar (for streusel topping)
  • 0.5 teaspoons Ground cinnamon (for streusel topping)
  • 2 tablespoons Unsalted butter, cold and cubed (for streusel topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour two 8x4-inch loaf pans or line them with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.

Step 3

In a large bowl, beat the softened butter and sour cream together using a hand or stand mixer until smooth and creamy, about 2 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; the batter should be thick.

Step 6

In a small bowl, combine the brown sugar, ground cinnamon, and chopped pecans or walnuts (if using) to make the filling.

Step 7

Spoon half of the batter into the prepared loaf pans, spreading it evenly. Sprinkle half of the cinnamon-sugar filling over the batter.

Step 8

Top with the remaining batter, spreading it out gently, and sprinkle with the remaining cinnamon-sugar filling.

Step 9

In another small bowl, prepare the streusel topping by mixing the flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs. Sprinkle the streusel evenly over the top of the loaves.

Step 10

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the loaves comes out clean.

Step 11

Allow the loaves to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 12

Slice and enjoy with a hot cup of coffee or tea! Store any leftovers in an airtight container at room temperature for up to 3 days.
