  • 1 cup Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 Eggs

  • 1.5 cups Sour cream
  • 2 teaspoons Pure vanilla extract
  • 2 cups Shredded sweetened coconut
  • 3 cups Powdered sugar
  • 8 ounces Cream cheese, softened
  • 0.5 cup Butter, softened (for frosting)
  • 1 teaspoon Pure coconut extract
  • 1 cup Shredded coconut for garnish

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3–4 minutes.

Add the eggs one at a time, beating well after each addition.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the sour cream (beginning and ending with the dry ingredients). Mix until just combined.
