Ingredients

  • 1.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 2 large Eggs
  • 1 cup Sour cream
  • 0.5 cups Milk
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Unsalted butter (melted)
  • 1 medium Apple (peeled, cored, and diced)
  • 1 as needed Butter or oil (for cooking)

Directions

Step 1

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt. Set aside.

Step 2

In a separate medium bowl, beat the eggs. Add sour cream, milk, vanilla extract, and melted butter, then whisk until smooth and well-combined.

Step 3

Gradually pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing; a few lumps are okay.

Step 4

Fold in the diced apple pieces until evenly distributed throughout the batter.

Step 5

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

Step 6

Scoop about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles begin to form on the surface and the edges appear set.

Step 7

Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.

Step 8

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 9

Serve the pancakes warm with your choice of toppings, such as maple syrup, whipped cream, or additional diced apples.
