Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Unsalted butter
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 4 cups Chicken or vegetable broth
  • 1 cup Sour cream
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh chives
  • 0.5 cup Shredded cheddar cheese
  • 4 slices, crumbled Cooked bacon

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Set aside.

Step 2

In a large pot, melt the butter over medium heat. Add the diced onion and cook for 5 minutes, or until softened and translucent.

Stir in the minced garlic and cook for another minute until fragrant.

Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
