Ingredients

  • 350 grams self-raising flour
  • 1 teaspoon salt
  • 60 grams unsalted butter
  • 200 ml sour cream
  • 100 ml milk
  • 2 tablespoons chives, finely chopped
  • 2 tablespoons additional self-raising flour for dusting

Directions

Step 1

Preheat the oven to 200°C (390°F). Line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the self-raising flour and salt.

Step 3

Add the butter to the bowl and use your fingertips to rub it into the flour mixture until it resembles fine breadcrumbs.

Step 4

Stir in the finely chopped chives to evenly distribute them throughout the flour mixture.

Step 5

In a separate jug, whisk together the sour cream and milk until smooth.

Step 6

Make a well in the center of the flour mixture and pour in the sour cream mixture. Using a butter knife, mix the ingredients together until a soft, sticky dough forms.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it 2-3 times to bring it together. Be careful not to over-knead, as this will make the damper tough.

Step 8

Shape the dough into a round, approximately 15 cm (6 inches) in diameter, and place it onto the prepared baking tray.

Step 9

Use a sharp knife to score a deep cross (about 1cm deep) into the top of the dough. Dust the surface lightly with additional self-raising flour.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the damper is golden brown and sounds hollow when tapped on the base.

Step 11

Remove from the oven and allow to cool on a wire rack for 10 minutes before serving. Serve warm or at room temperature.
