Ingredients

  • 6 cups sour cherries, pitted
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoons salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 0.5 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

In a large mixing bowl, combine the sour cherries, granulated sugar, cornstarch, and fresh lemon juice. Stir until the cherries are evenly coated. Pour the mixture into the prepared baking dish and dot with 2 tablespoons of unsalted butter.

Step 3

In another bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 4

Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to work it into the mixture until it resembles coarse crumbs.

Step 5

Stir in the milk and vanilla extract until just combined, being careful not to overmix. The dough will be thick and slightly sticky.

Step 6

Drop the dough by spoonfuls over the cherry mixture, covering most of the surface but leaving some gaps for the filling to bubble through.

Step 7

If desired, sprinkle the coarse sugar on top of the dough for added texture and sweetness.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbly and thickened.

Step 9

Allow the cobbler to cool for 10-15 minutes before serving. Serve warm on its own or with a scoop of vanilla ice cream.
