Ingredients

  • 2 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 medium celery stalks, sliced
  • 3 medium potatoes, cubed
  • 1 medium zucchini, diced
  • 1 14-ounce can canned diced tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 piece bay leaf
  • 2 cups baby spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)

Directions

Step 1

Heat a large pot over medium heat and add olive oil.

Step 2

Season the chicken breasts with a pinch of salt and pepper on both sides. Add them to the pot and sear for 4 minutes per side, or until golden brown but not fully cooked. Remove the chicken from the pot and set aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 1 minute until fragrant.

Step 4

Stir in the carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally, to soften the vegetables slightly.

Step 5

Add the diced zucchini, canned diced tomatoes (with their juices), chicken broth, dried thyme, oregano, and bay leaf. Stir to combine.

Step 6

Return the seared chicken breasts to the pot. Bring the soup to a boil, then lower the heat to a simmer. Cover the pot and let it cook for 20 minutes.

Step 7

Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup.

Step 8

Add the baby spinach to the pot and stir until wilted, about 2 minutes.

Step 9

Season the soup with salt and black pepper to taste. If desired, add a splash of lemon juice for brightness.

Step 10
