  • 2 tablespoons, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, sliced carrots, and sliced celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Push the vegetables to one side of the pot and add the diced chicken breasts to the other side. Cook for 5-6 minutes, stirring occasionally, until the chicken is lightly browned on all sides.
