Ingredients

  • 1 pound Salmon fillets (skinless)
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 3 tablespoons Unsalted butter
  • 1 medium Yellow onion (diced)
  • 2 pieces Celery stalks (diced)
  • 2 medium Carrots (diced)
  • 1 cup Frozen peas
  • 3 tablespoons All-purpose flour
  • 1.5 cups Chicken broth
  • 0.5 cup Heavy cream
  • 2 medium Potatoes (peeled and diced)
  • 2 tablespoons Fresh dill (chopped)
  • 2 tablespoons Parsley (chopped)
  • 2 pieces Refrigerated pie crusts
  • 1 large Egg (beaten, for egg wash)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Place the salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and black pepper. Bake for 15 minutes or until cooked through. Set aside to cool slightly, then flake into large chunks.

Step 3

In a large skillet, melt the butter over medium heat. Add the diced onion, celery, and carrots. Cook for 5-7 minutes until softened.

Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste.

Bake the pie for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
