  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 1 medium (chopped) yellow onion
  • 3 medium (sliced) carrots
  • 3 medium (sliced) celery stalks
  • 3 minced garlic cloves
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups uncooked egg noodles
  • 2 tablespoons (chopped) fresh parsley

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season both sides of the chicken breasts with a pinch of salt and pepper. Sear the chicken in the pot for 3-4 minutes per side until lightly browned. Remove and set aside.

In the same pot, add chopped onion, sliced carrots, and celery. Sauté for 5-7 minutes until the vegetables begin to soften.
