  • 1 medium yellow onion, chopped
  • 2 medium leeks, white and light green parts only, sliced
  • 2 medium carrots, peeled and diced
  • 1 large zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 2 small potatoes, peeled and diced
  • 2 medium tomatoes, seeded and diced
  • 3 garlic cloves, minced
  • 6 cups vegetable stock
  • 1.5 cups cooked white beans
  • 1 cup small pasta or vermicelli
  • 2 cups basil leaves
  • 1 garlic clove for pistou
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup olive oil for pistou
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and sliced leeks. Sauté until softened, about 5 minutes.

Step 3

Stir in the diced carrots, zucchini, green beans, and potatoes. Cook for another 5 minutes.

Step 4

Add the minced garlic and diced tomatoes to the pot, stirring to combine.
