Ingredients

  • 2 tablespoons unsalted butter
  • 1 large yellow onion, finely chopped
  • 3 cups fresh sorrel leaves, stems removed and roughly chopped
  • 1.5 cups frozen peas
  • 4 cups vegetable stock
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, finely chopped (optional, for garnish)

Directions

Step 1

Melt the butter in a large saucepan over medium heat.

Step 2

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the sorrel leaves and cook until they wilt down, about 2-3 minutes.

Step 4

Add the peas and vegetable stock to the saucepan. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.

Step 5

Remove the saucepan from the heat and let the soup cool slightly.

Step 6

Using an immersion blender or working in batches with a countertop blender, blend the soup until smooth.

Step 7

Return the soup to the saucepan and stir in the heavy cream. Season with salt and black pepper to taste.

Step 8

Heat the soup gently over low heat until warmed through, being careful not to let it boil.

Step 9

Ladle the soup into bowls and garnish with fresh parsley if desired.

Step 10

Serve warm with crusty bread on the side for a complete meal.
