Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 15-oz cans black-eyed peas, drained and rinsed
  • 1 15-oz can diced tomatoes, with juice
  • 4 cups beef broth
  • 2 cups water
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the ground beef and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 6-8 minutes. Drain off any excess fat.

Step 3

Reduce the heat to medium. Add the diced onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.

Step 4

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Step 5

Add the black-eyed peas, diced tomatoes (with juice), beef broth, and water to the pot. Stir to combine.

Step 6

Add the bay leaf, dried thyme, paprika, salt, and black pepper. Bring the mixture to a boil.

Step 7

Once boiling, reduce the heat to low and cover the pot. Simmer for 30 minutes, stirring occasionally, until the flavors meld together.

Step 8

Remove and discard the bay leaf. Taste the soup and adjust the seasoning with additional salt and pepper, if needed.

Step 9

Ladle the soup into bowls. Garnish with freshly chopped parsley and serve hot with crusty bread or a side of cornbread.
