  • 1 pound stew beef (cut into 1-inch cubes)

  • 1 large yellow onion (diced)
  • 3 medium carrots (peeled and sliced)
  • 2 medium celery stalks (sliced)
  • 2 medium russet potatoes (peeled and cubed)
  • 3 count garlic cloves (minced)
  • 14.5 ounces diced tomatoes (canned with juice)
  • 6 cups beef broth
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 count bay leaf
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef cubes with salt and pepper, then add them to the pot. Sear the beef for 5-7 minutes, stirring occasionally, until browned on all sides. Remove the beef and set aside.

Step 3

Lower the heat to medium. Add the diced onion, sliced carrots, and sliced celery to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
