Ingredients

  • 1 medium Potato (peeled and diced)
  • 2 cloves Garlic cloves (minced)
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil (optional, for added creaminess)
  • 0.5 cup Bread crumbs (optional, for topping)

Directions

Step 1

Soak the raw cashews in hot water for 20 minutes or overnight in cold water, then drain and rinse.

Step 2

Bring a medium pot of water to a boil and add the diced carrot and potato. Cook until tender, about 10-12 minutes, then drain.

Step 3

While the vegetables are cooking, boil the pasta according to package instructions. Drain, rinse with cold water to stop cooking, and set aside.
