  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

In a mixing bowl, toss the sweet potato cubes and zucchini slices with 1 tablespoon of olive oil, a pinch of smoked paprika, salt, and pepper. Spread them evenly on the prepared baking sheet.
