Ingredients

  • 300 grams All-purpose flour
  • 150 grams Butter, unsalted (cold, cubed)
  • 100 grams Caster sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 75 grams Mixed dried fruits (raisins, currants, or chopped dates)
  • 2 large Egg yolks
  • 3 tablespoons Milk
  • 1 medium lemon Grated zest of a lemon

Directions

Step 1

Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper or lightly grease it.

In a large mixing bowl, combine the flour, ground cinnamon, and ground nutmeg.

Add the cubed butter into the dry ingredients, rubbing it in with your fingertips until the mixture resembles fine breadcrumbs.

Stir in the caster sugar, mixed dried fruits, and lemon zest until evenly distributed.

In a separate small bowl, whisk the egg yolks and milk together.
