Ingredients

  • 3 whole Lemons (zest and juice)
  • 150 grams Granulated sugar
  • 4 large Egg yolks
  • 4 sheets Gelatin sheets
  • 250 ml Whipping cream
  • 4 large Egg whites
  • 50 grams Powdered sugar
  • 50 ml Water

Directions

Step 1

Begin by grating the zest of 3 lemons and squeezing their juice. Reserve both for later.

Step 2

Soak the gelatin sheets in cold water for 5-10 minutes until softened.

Step 3

In a heatproof bowl, whisk together the egg yolks, granulated sugar, and water. Place the bowl over a saucepan of simmering water (double boiler setup) and whisk continuously until the mixture thickens and becomes pale.

Step 4

Remove the bowl from heat and mix in the lemon juice and zest. Squeeze the excess water out of the softened gelatin sheets and whisk them into the warm lemon mixture until fully dissolved. Set aside to cool to room temperature.

Step 5

In a separate bowl, whip the cream until it forms soft peaks. Fold the whipped cream gently into the cooled lemon mixture.

Step 6

In another clean bowl, whisk the egg whites until they form stiff peaks. Gradually add powdered sugar while whisking to stabilize the meringue.
