Preheat your oven to 375°F (190°C).
Using a sharp knife, cut a deep pocket into the thick side of each chicken breast, making sure not to slice all the way through.
In a skillet over medium heat, warm 1 tablespoon of olive oil. Add spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine the cooked spinach, chopped sun-dried tomatoes, shredded mozzarella, 1 clove of minced garlic, and 1/2 teaspoon of salt. Mix well.
