Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 1 medium carrot, peeled and diced
  • 1 celery stalk, diced
  • 2 15-ounce cans cannellini beans (white beans), drained and rinsed
  • 4 cups vegetable broth
  • 0.5 cup dry white wine
  • 1 bay leaf
  • 4 fresh thyme sprigs
  • 1 fresh rosemary sprig
  • 2 cups baby spinach (optional)
  • 1 tablespoon lemon juice
  • 0 to taste salt
  • 0 to taste ground black pepper
  • 0 to taste parmesan cheese, grated (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion to the pot and sauté for 4-5 minutes, or until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the diced carrot and celery, and sauté for another 5 minutes until the vegetables begin to soften.

Step 5

Pour in the white beans, vegetable broth, and white wine, then stir to combine.

Step 6

Add the bay leaf, thyme sprigs, and rosemary sprig. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20 minutes.

Step 7

Remove the bay leaf, thyme sprigs, and rosemary sprig. Use an immersion blender to blend the soup partially, leaving some texture with whole beans and vegetables. Alternatively, transfer half the soup to a blender, blend until smooth, and return it to the pot.

Step 8

If using, stir in the baby spinach and cook for an additional 2 minutes until wilted.

Step 9

Add the lemon juice, and season with salt and black pepper to taste.

Step 10

Ladle the soup into bowls, garnish with grated parmesan cheese if desired, and serve hot.
