Ingredients

  • 2 cups Romaine lettuce
  • 1 cup Baby arugula
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 large Avocado
  • 0.25 cup Red onion
  • 0.5 cup Feta cheese, crumbled
  • 0.75 cup Cooked chickpeas, rinsed and drained
  • 2 tablespoons Fresh parsley, chopped
  • 3 tablespoons Lemon juice
  • 3 tablespoons Extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the romaine lettuce and baby arugula. Chop the romaine into bite-sized pieces and place both greens in a large salad bowl.

Step 2

Halve the cherry tomatoes. Peel and dice the cucumber into small cubes. Thinly slice the red onion. Add tomatoes, cucumber, and onion to the bowl with the greens.

Step 3

Cut the avocado in half, remove the pit, and dice the flesh into small cubes. Add the avocado to the salad bowl.
