Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Warm water
  • 2 tablespoons Vegetable oil or shortening
  • 4 cups Vegetable oil (for frying)
  • 0.5 cups Honey
  • 2 tablespoons Powdered sugar

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined.

Step 2

Create a well in the center of the dry ingredients and pour in the warm water and 2 tablespoons of vegetable oil or shortening. Mix until a cohesive dough forms.

Step 3

Turn the dough out onto a lightly floured surface and knead for 4-5 minutes, or until smooth and elastic. Cover the dough with a clean kitchen towel and let it rest for 20 minutes.

Step 4

After resting, divide the dough into 12 equal portions. Roll each portion into small balls and then flatten them into discs about 1/4-inch thick using a rolling pin.

Step 5

Heat 4 cups of vegetable oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).

Step 6

Carefully drop one or two pieces of dough into the oil at a time, making sure not to overcrowd the pot. Fry for 1-2 minutes on each side, or until puffed and golden brown. Use a slotted spoon to remove the sopapillas and drain them on a plate lined with paper towels.

Step 7

Once all of the sopapillas are fried, drizzle them generously with warm honey and dust lightly with powdered sugar.

Step 8

Serve the Sopapillas Rudd warm, either on their own or with additional honey on the side for dipping.
