Ingredients

  • 200 grams Fideo pasta (vermicelli or angel hair, broken into smaller pieces)

  • 4 cups Chicken or vegetable broth
  • 2 tablespoons Vegetable oil
  • 2 sprigs Fresh cilantro (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Prepare the tomato base: In a blender, combine the Roma tomatoes, onion, garlic cloves, and 1 cup of the broth. Blend until smooth and set aside.

Heat the oil in a medium-sized pot over medium heat. Add the fideo pasta and toast it, stirring frequently, until golden brown. Be careful not to burn it.
