  • 1 tablespoon Vegetable oil
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, peeled and sliced
  • 2 stalks Celery stalks, chopped
  • 1 medium Zucchini, diced
  • 1 medium Russet potato, diced
  • 14.5 ounce Diced tomatoes, canned
  • 6 cups Chicken broth
  • 1 leaf Bay leaf
  • 0.25 cup Chopped cilantro, for garnish
  • 1 lime Lime wedges, for serving

Directions

Step 1

In a large mixing bowl, combine the ground beef, ground pork, uncooked rice, egg, 2 minced garlic cloves, 0.25 cup of chopped cilantro, cumin, salt, and black pepper. Mix until well combined, but do not overmix.

Step 2

Form the mixture into 1-inch meatballs and place them on a plate or tray. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 3-4 minutes until softened and translucent.

Add the sliced carrots, chopped celery, diced zucchini, and diced potato to the pot. Stir and cook for 5 minutes.
