Ingredients

  • 6 pieces Sopaipillas (fried pastry bread)
  • 2 cups Milk
  • 1 cup Heavy cream
  • 4 large Eggs
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Nutmeg
  • 0.5 cup Raisins (optional)
  • 1 tablespoon Butter
  • 2 tablespoons Powdered sugar (for garnish)
  • 0 Maple syrup or caramel sauce (optional, for serving)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish with butter.

Step 2

Tear the sopaipillas into bite-sized pieces and evenly spread them across the prepared baking dish.

Step 3

In a medium mixing bowl, whisk together the milk, heavy cream, eggs, granulated sugar, brown sugar, vanilla extract, ground cinnamon, and nutmeg until well combined.

Step 4

Pour the custard mixture evenly over the sopaipilla pieces, ensuring all the bread is coated. Gently press down with the back of a spoon so the bread absorbs the liquid.

Step 5

If using raisins, sprinkle them evenly over the top of the soaked bread mixture.

Step 6

Let the mixture sit for about 10 minutes to allow the bread to fully absorb the custard.

Step 7

Dot the top of the pudding with small pieces of the butter.

Step 8

Place the baking dish in the oven and bake for 35-40 minutes, or until the top is golden brown and the pudding is set (a knife inserted in the center should come out clean).

Step 9

Remove the pudding from the oven and let it cool slightly for about 10 minutes.

Step 10

Dust the top with powdered sugar for garnish and serve warm. Optionally, drizzle with maple syrup or caramel sauce for added sweetness.
