Ingredients

  • 1 lb ground beef (80/20 or leaner)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 14.5 oz canned diced tomatoes (with juices)
  • 8 oz canned tomato sauce
  • 15 oz canned kidney beans (drained and rinsed)
  • 15 oz canned black beans (drained and rinsed)
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.25 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp sugar
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • 0.5 cup shredded cheddar cheese (for serving, optional)
  • 0.5 cup sour cream (for serving, optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add olive oil and swirl to coat the bottom.

Step 2

Add the diced onion and green bell pepper. Sauté for 5 minutes, stirring occasionally, until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Push the vegetables to the side of the pot and add the ground beef. Cook, breaking it up with a wooden spoon, until browned and no longer pink, about 6-8 minutes. Drain any excess fat if necessary.

Step 5

Stir the sautéed vegetables back in with the ground beef. Add chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, pepper, and sugar. Stir well to coat the mixture with spices.

Step 6

Pour in the diced tomatoes (with juices), tomato sauce, and beef broth. Stir to combine.

Step 7

Add the kidney beans and black beans. Mix everything thoroughly.

Step 8

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for 20-25 minutes, stirring occasionally. Adjust seasoning to taste if needed.

Step 9

Serve hot topped with shredded cheddar cheese, sour cream, and a sprinkle of chopped cilantro, if desired. Enjoy!
