Ingredients

  • 1 cup Semolina (Sooji)
  • 0.5 cup Ghee
  • 1 cup Granulated sugar
  • 2 cups Water
  • 0.5 cup Milk
  • 4 pods Green cardamom pods
  • 2 tablespoons Chopped nuts (almonds, pistachios, or cashews)
  • 2 tablespoons Raisins
  • 1 pinch Saffron strands (optional)

Directions

Step 1

In a medium-sized saucepan, heat the ghee on medium heat until melted.

Step 2

Add the green cardamom pods and sauté them in the ghee for 1-2 minutes until fragrant.

Step 3

Gradually stir in the semolina (sooji) and roast it on medium-low heat, stirring constantly. Cook until the semolina turns golden brown and releases a nutty aroma, about 8-10 minutes.

Step 4

In a separate pan or kettle, heat the water and milk together. Add the saffron strands (if using) and bring the mixture to a gentle simmer.

Step 5

Once the semolina is roasted, carefully pour the hot milk and water mixture into the roasted semolina. Stir continuously to prevent clumps from forming. Be cautious, as the mixture will splutter initially.

Step 6

Add the sugar and mix well, ensuring it dissolves completely. Continue to cook on low heat, stirring frequently, until the halwa thickens and begins to leave the sides of the pan, about 5-7 minutes.

Step 7

Stir in the chopped nuts and raisins, reserving a few for garnish. Mix well.

Step 8

Remove the halwa from heat and transfer it to a serving dish. Garnish with the reserved nuts and raisins.

Step 9

Serve warm and enjoy your delicious Sooji Ka Halwa (Pakistani Style)!
