  • 1 cup Semolina (Sooji)
  • 0.5 cup Ghee (Clarified Butter)
  • 0.75 cup Sugar
  • 2 cups Water
  • 1 cup Milk
  • 0.25 teaspoon Cardamom Powder
  • 10 pieces Cashew Nuts
  • 2 tablespoons Raisins

Directions

Step 1

Heat 1/2 cup of ghee in a heavy-bottomed pan over medium heat.

Step 2

Add 1 cup of semolina (sooji) to the pan and roast it in the ghee, stirring continuously until it turns golden and gives off a nutty aroma. This should take about 5–7 minutes.

Step 3

While the semolina is roasting, combine 2 cups of water and 1 cup of milk in another saucepan. Bring it to a gentle boil and then reduce the heat to low.

Step 4

Once the semolina is properly roasted, stream the warm water-milk mixture into the pan slowly while stirring continually to avoid lumps.

Add 3/4 cup of sugar to the mixture and stir well to dissolve completely.

Reduce the heat to low and continue cooking while stirring, allowing the semolina to absorb the liquid and thicken into a pudding-like consistency. This should take 3–4 minutes.

Stir in 1/4 teaspoon of cardamom powder for fragrance.
