Ingredients

  • 1 cup white long-grain rice
  • 2 tablespoons olive oil
  • 0.5 cup yellow onion
  • 2 garlic cloves
  • 2 tablespoons tomato paste
  • 2 cups chicken or vegetable broth
  • 0.5 cup diced green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon kosher salt
  • 2 tablespoons fresh cilantro
  • 1 tablespoon fresh lime juice

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch. Drain well and set aside.

Step 2

In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, or until softened and translucent.

Step 3

Mince the garlic cloves and add them to the pan. Cook for 30 seconds until fragrant.

Step 4

Stir in the tomato paste, cumin, and paprika, and cook for 1 minute to let the spices bloom.

Step 5

Add the diced green chiles to the saucepan and stir to combine.

Step 6

Pour in the rinsed rice and mix well to coat it in the tomato and spice mixture.

Step 7

Slowly add the broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low and cover with a tight-fitting lid.

Step 8

Simmer the rice for 18-20 minutes, or until the liquid has been absorbed and the rice is tender. Avoid lifting the lid during this time to ensure even cooking.

Step 9

Once the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes. This allows the flavors to meld.

Step 10

Fluff the rice with a fork, then stir in the chopped cilantro and fresh lime juice.

Step 11

Taste and adjust seasoning if needed. Serve warm as a side dish or as a component of your favorite Southwestern-inspired meal.
