  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 14.5 ounces fire-roasted tomatoes, canned
  • 2 cups chicken broth
  • 15 ounces pinto beans, canned, drained and rinsed
  • 15 ounces black beans, canned, drained and rinsed
  • 4 ounces diced green chilies, canned
  • 1 cup corn kernels, canned or frozen
  • 0.25 cup fresh cilantro, chopped
  • 1 large lime, juiced
  • 0 optional toppings: shredded cheese, sour cream, tortilla chips, avocado slices

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Sear the chicken in the pot for 3-4 minutes per side, until lightly browned. Remove chicken from the pot and set aside.

In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently.
