  • 4 large eggs
  • 2 tablespoons milk
  • 1 tablespoon olive oil

  • 0.5 medium, diced bell pepper
  • 6 halved cherry tomatoes
  • 1 cup, loosely packed spinach
  • 0.25 cup, shredded cheddar cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red chili flakes
  • 1 tablespoon, chopped fresh parsley

Directions

Step 1

In a medium bowl, crack the eggs and whisk them together with the milk, salt, and black pepper until well combined. Set aside.

Heat a large non-stick skillet over medium heat and add the olive oil. Once the oil is hot, add the diced onion and bell pepper. Sauté for 3-4 minutes or until softened.
