Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 medium, diced Yellow onion
  • 4 minced Garlic cloves
  • 4 cups Chicken or vegetable broth
  • 1 cup Coconut milk (unsweetened, canned)
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 sliced (for garnish) Green onions
  • 0.5 cup (optional, for garnish) Crispy cooked bacon or plant-based bacon bits
  • 0.5 cup (optional, for garnish) Dairy-free shredded cheese

Directions

Step 1

Peel and dice the russet potatoes into 1-inch cubes. Set aside.

Step 2

In a large soup pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 4

Add the cubed potatoes to the pot and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 5

Using an immersion blender, partially blend the soup directly in the pot, leaving some potato chunks for texture. (Alternatively, transfer half of the soup to a blender, blend until smooth, and return it to the pot.)

Step 6

Stir in the coconut milk, nutritional yeast, smoked paprika, salt, and black pepper. Simmer for an additional 5 minutes to combine the flavors.

Step 7

Taste the soup and adjust the seasoning as needed.

Step 8

Ladle the soup into bowls and garnish with sliced green onions, crispy bacon or plant-based bacon bits, and dairy-free shredded cheese, if desired.

Step 9

Serve warm and enjoy your creamy, dairy-free loaded potato soup!
