Directions

Step 1

Peel and dice the russet potatoes into evenly sized chunks. Place them in a large pot, cover with water, and boil over medium heat until fork-tender, about 15-20 minutes.

While the potatoes cook, pat the chicken breasts dry with paper towels and season them with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of rosemary, and 1 teaspoon of thyme.
