Ingredients

  • 4 pounds beef brisket
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 packet onion soup mix
  • 2 tablespoons brown sugar
  • 2 large yellow onions, thinly sliced
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Trim excess fat from the brisket, leaving a thin layer of fat on top for flavor.

Step 3

In a small bowl, mix kosher salt, black pepper, paprika, garlic powder, and the onion soup mix. Rub this spice mixture all over the brisket, ensuring an even coating.

Step 4

Heat olive oil in a large, oven-safe pot or Dutch oven over medium-high heat. Sear the brisket on all sides until deeply browned, about 3-4 minutes per side. Remove the brisket and set aside.

Step 5

In the same pot, add the sliced onions. Cook, stirring frequently, until the onions are soft and golden, about 7-8 minutes. Add the minced garlic and cook for another 1-2 minutes.

Step 6

Sprinkle the brown sugar over the onions and stir until melted and caramelized. Then, add the beef broth, ketchup, and apple cider vinegar. Stir well to combine.

Step 7

Return the seared brisket to the pot, fat-side up. Spoon some of the sauce and onions over the top of the brisket.

Step 8

Cover the pot with a lid or aluminum foil. Place it in the preheated oven and bake for 3-4 hours, or until the brisket is fork-tender. Every hour, baste the brisket with the sauce or flip it to ensure it stays moist.

Step 9

Once done, remove the brisket from the pot and let it rest on a cutting board for 15 minutes. Slice against the grain into thin slices.

Step 10

Serve the brisket with the caramelized onion sauce spooned on top. Enjoy with mashed potatoes, roasted vegetables, or your favorite side!
