Ingredients

  • 300 grams Somen noodles
  • 1 Cucumber
  • 1 Carrot
  • 3 stalks Green onions
  • 100 grams Cooked ham (optional, julienned)
  • 2 Eggs
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 2 tablespoons Water
  • 1 tablespoon Sesame seeds (optional, for garnish)
  • 0.25 teaspoon Salt
  • 1 teaspoon Cooking oil (for egg frying)

Directions

Step 1

Bring a large pot of water to a boil and cook the somen noodles according to the package instructions (generally 2-3 minutes). Drain and rinse under cold water to cool. Set aside.

Step 2

Peel and julienne the cucumber and carrot into thin matchstick-like pieces. Thinly slice the green onions.

If using ham, slice it into thin julienned strips.

Prepare the eggs by whisking them in a small bowl with a pinch of salt. Heat a non-stick pan with a teaspoon of cooking oil over medium heat.
