Ingredients

  • 2.5 cups All-purpose flour
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Salt
  • 1 cup Unsalted butter (cold, cubed)
  • 8 tablespoons Ice water
  • 6 medium Granny Smith apples (peeled, cored, and sliced thinly)
  • 0.5 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1.5 teaspoons Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Heavy cream
  • 1 unit Large egg (for egg wash)
  • 1 tablespoon Coarse sugar (optional, for topping)

Directions

Step 1

In a large bowl, whisk together 2 1/2 cups of all-purpose flour, 1 tablespoon granulated sugar, and 1 teaspoon salt.

Step 2

Cut 1 cup of cold, cubed unsalted butter into the dry ingredients using a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 3

Gradually add 8 tablespoons of ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Step 4

Preheat your oven to 425°F (220°C).

Step 5

In a large mixing bowl, combine the sliced Granny Smith apples, 1/2 cup brown sugar, 1/4 cup granulated sugar, 1 1/2 teaspoons ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon salt, and 2 tablespoons of all-purpose flour. Stir until the apples are well coated.

Step 6

On a floured surface, roll out one disc of pie dough into a 12-inch circle. Transfer it to a 9-inch pie dish, pressing it gently into the bottom and sides.

Step 7

Pour the apple filling into the prepared pie crust, spreading it evenly.

Step 8

Roll out the second disc of dough into a 12-inch circle. Place it over the apples or cut it into strips to create a lattice design. Trim any excess dough and crimp the edges to seal.

Step 9

In a small bowl, beat the large egg with 2 tablespoons of heavy cream to create an egg wash. Brush this mixture over the top crust.

Step 10

If desired, sprinkle 1 tablespoon of coarse sugar over the top for added texture and sweetness.

Step 11

Slice a few small vents in the top crust to allow steam to escape if you're using a whole top crust.

Step 12

Place the pie on a baking sheet to catch any drips in the oven. Bake at 425°F (220°C) for 15 minutes, then reduce the oven temperature to 375°F (190°C) and continue baking for 50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 13

Allow the pie to cool at room temperature for at least 2 hours to let the filling set before slicing and serving.
