Ingredients

  • 1 medium, shredded Green papaya
  • 2 large Garlic cloves
  • 2 small Bird's eye chili peppers
  • 2 medium, chopped Tomatoes
  • 50 grams, cut into 1-inch pieces Long beans
  • 2 tablespoons Roasted peanuts
  • 1 tablespoon Dried shrimp
  • 1 tablespoon Palm sugar
  • 2 tablespoons Lime juice
  • 1.5 tablespoons Fish sauce
  • 1 medium, shredded Carrot
  • 4 small, for serving Cabbage leaves

Directions

Step 1

Peel and shred the green papaya using a julienne peeler or a box grater. Place the shredded papaya in a large mixing bowl.

Step 2

In a mortar and pestle, pound the garlic and bird's eye chili peppers until crushed and aromatic.

Step 3

Add the palm sugar to the mortar and continue pounding until dissolved.

Step 4

Add the dried shrimp and long beans to the mortar. Gently bruise them with the pestle to release their flavors.

Step 5

Transfer the contents of the mortar into the mixing bowl with the shredded papaya.

Add the chopped tomatoes, shredded carrot, and roasted peanuts to the bowl.
