Ingredients

  • 0.5 cup white rice
  • 1 cup water
  • 0.5 sweet onion (small, finely chopped)
  • 1 tablespoon unsalted butter
  • 1 teaspoon olive oil
  • 1 clove garlic (minced)
  • 0.25 teaspoon salt
  • 1 teaspoon fresh parsley (chopped, optional)

Directions

Step 1

Rinse the white rice thoroughly under cold water until the water runs clear to remove excess starch. Drain and set aside.

Step 2

In a small saucepan or pot, combine the rinsed rice, water, and 1/8 teaspoon of salt. Bring to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Step 4

While the rice is cooking, heat the butter and olive oil in a skillet over medium heat.

Step 5

Add the finely chopped sweet onion and sauté for 6-8 minutes, stirring frequently, until the onions are soft and caramelized. Adjust heat as necessary to prevent burning.

Step 6

Add the minced garlic to the caramelized onions and sauté for an additional 30-60 seconds until fragrant.

Step 7

Fluff the cooked rice with a fork and gently fold in the caramelized onion and garlic mixture. Adjust salt to taste if necessary.

Step 8

Serve immediately, garnished with freshly chopped parsley if desired.
