Ingredients

  • 1 tablespoon olive oil
  • 1 piece chicken breast
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cloves garlic
  • 5 pieces white button mushrooms
  • 0.5 cup white rice
  • 1 cup chicken broth
  • 0.25 cup onion
  • 1 tablespoon parsley
  • 1 teaspoon butter

Directions

Step 1

Heat olive oil in a medium pan over medium heat.

Step 2

Season the chicken breast with 1/4 teaspoon of salt and a pinch of black pepper.

Step 3

Cook the chicken breast for 4-5 minutes per side until golden brown and cooked through. Remove from the pan and set aside.

Step 4

In the same pan, add the butter and sauté the chopped onion until translucent, about 2-3 minutes.

Step 5

Mince the garlic and add it to the onions, cooking for another 1 minute until fragrant.

Step 6

Slice the mushrooms and add them to the pan. Sauté for 3-4 minutes until softened.

Rinse the rice under cold water thoroughly and add it to the pan, stirring to coat the grains in the mushroom mixture.

Pour in the chicken broth, stir, and season with the remaining salt and black pepper.

Bring the mixture to a boil, then reduce the heat to low, cover the pan, and simmer for 15 minutes.

While the rice is cooking, dice the cooked chicken into bite-sized pieces.

After 15 minutes, gently stir the diced chicken into the pilaf and let it sit off the heat (covered) for 5 minutes to absorb any remaining liquid.

Garnish with freshly chopped parsley before serving.
