  • 4 pieces sole fillets
  • 8 pieces grape leaves (jarred or fresh)
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 cloves garlic cloves (minced)
  • 2 tablespoons fresh dill (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup vegetable stock or water
  • 1 whole lemon wedges (for garnish)

Directions

Step 1

If using jarred grape leaves, rinse them under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for 1-2 minutes to soften. Pat dry with paper towels.

In a small bowl, mix together the olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper to form a marinade.

Lightly brush both sides of each sole fillet with the marinade, reserving some for later.
