Ingredients

  • 4 pieces sole fillets
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.25 cups all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 0.25 cups basil pesto
  • 1 tablespoon lemon juice
  • 0.25 cups grated Parmesan cheese
  • 2 tablespoons fresh basil leaves (optional, for garnish)

Directions

Step 1

Pat the sole fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

Lightly dredge the sole fillets in the flour, shaking off any excess flour.

Step 3

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 4

Once the butter is melted and the oil is hot, add the sole fillets to the skillet. Cook for 2-3 minutes on each side, until the fish is golden and cooked through. Remove the fillets from the skillet and set aside on a plate.

In the same skillet, lower the heat to medium-low and add the heavy cream. Stir occasionally, scraping any browned bits from the bottom of the pan.
