Ingredients

  • 4 pieces Sole fillets
  • 0.5 cups All-purpose flour
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 tablespoons Lemon juice
  • 2 tablespoons Capers
  • 2 tablespoons Parsley, fresh, chopped
  • 4 pieces Lemon slices (for garnish)

Directions

Step 1

Pat the sole fillets dry with paper towels and set them aside on a plate.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Mix well.

Step 3

Dredge each sole fillet lightly in the flour mixture, shaking off any excess flour.

Step 4

Heat a large skillet over medium heat and add the olive oil and 1 tablespoon of butter.

Step 5

When the butter has melted and the skillet is hot, add the sole fillets in a single layer. Cook for 2-3 minutes on each side until the fish is golden brown and cooked through. Do this in batches if necessary, and transfer cooked fish to a plate lined with paper towels.
