  • 4 pieces sole fillets
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 4 medium ripe tomatoes, diced
  • 0.5 cup dry white wine
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 4 slices lemon slices

Directions

Step 1

Pat the sole fillets dry with paper towels and season both sides with a pinch of salt and black pepper. Set them aside.

Step 2

Heat 2 tablespoons of olive oil and the butter in a large skillet over medium heat. When the butter has melted, add the chopped onion and sauté for 3-4 minutes until softened and translucent.

Add the minced garlic to the skillet and cook for 30 seconds, until fragrant.
