Ingredients

  • 4 pieces sole fillets
  • 500 g fresh spinach
  • 4 tbsp unsalted butter

  • 250 ml milk
  • 60 g grated Parmesan cheese

  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg, ground
  • 50 g breadcrumbs
  • 1 tbsp olive oil

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Rinse the fresh spinach and pat it dry. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the spinach to the skillet and cook until wilted, about 3-4 minutes. Season with a pinch of salt and set aside. Drain any excess liquid.

In a medium saucepan, melt the remaining 2 tablespoons of butter over medium heat. Stir in the flour to create a roux and cook for 1 minute, stirring constantly.
