Ingredients

  • 1 pound fresh green beans
  • 3 tablespoons butter
  • 1 medium, diced yellow onion
  • 2 minced garlic cloves
  • 1 can (10.5 ounces) mushroom soup (condensed)
  • 1 cup heavy cream
  • 2 teaspoons soy sauce
  • 1 cup shredded cheddar cheese
  • 1 cup panko breadcrumbs
  • 1 cup fried onions
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 2 tablespoons, chopped fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of water to a boil and add a pinch of salt. Blanch the green beans for 3-4 minutes, then immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.

Step 3

In a large skillet over medium heat, melt the butter. Add the diced onion and cook until softened, around 3 minutes. Add the minced garlic and sauté for another minute until fragrant.

Step 4

Stir in the condensed mushroom soup, heavy cream, and soy sauce. Cook the mixture until it is smooth and warmed through, about 3 minutes. Season with paprika, black pepper, and salt.

Step 5

Fold the blanched green beans into the creamy mixture. Mix until evenly coated.

Step 6

Transfer the mixture to a greased 9x13-inch casserole dish. Spread it out evenly.

Step 7

Sprinkle the shredded cheddar cheese evenly over the top of the green bean mixture.

Step 8

In a small bowl, combine the panko breadcrumbs and olive oil. Mix together until the crumbs are lightly coated. Sprinkle this mixture evenly over the cheese layer.

Step 9

Top the casserole with fried onions for added crunch.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbling and the top is golden brown.

Step 11

Remove from the oven and allow to cool for 5 minutes. Optionally, garnish with fresh parsley before serving.
