Ingredients

  • 1.5 cups Warm water
  • 1 tablespoon Granulated sugar
  • 2.25 teaspoons Active dry yeast
  • 4 cups All-purpose flour
  • 1 teaspoon Salt
  • 2 tablespoons Unsalted butter, melted
  • 0.67 cup Baking soda
  • 1 Egg yolk
  • 1 tablespoon Water
  • 2 tablespoons Coarse sea salt

Directions

Step 1

In a large mixing bowl, combine the warm water and granulated sugar. Stir until the sugar is dissolved.

Step 2

Sprinkle the active dry yeast over the water mixture and let it sit for 5-7 minutes, until the yeast becomes frothy.

Step 3

Add the all-purpose flour, salt, and melted unsalted butter to the yeast mixture. Stir with a wooden spoon or dough hook until a dough forms.

Step 4

Knead the dough on a lightly floured surface for 5-7 minutes, or until it is smooth and elastic.

Step 5

Place the dough in an oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for 1 hour, or until it doubles in size.

Step 6

Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper. Lightly grease the parchment paper.

Step 7

In a large pot, bring 10 cups of water and the baking soda to a boil. Reduce to a simmer.

Step 8

Punch down the risen dough and divide it into 8 equal portions.

Step 9

Roll each portion into a 20-24 inch rope and shape into a traditional pretzel shape (or any shape you prefer).

Step 10

Using a slotted spatula, gently lower each pretzel into the simmering baking soda water for 20-30 seconds. Remove and place on the prepared baking sheets.

Step 11

In a small bowl, whisk together the egg yolk and 1 tablespoon of water to create an egg wash. Brush each pretzel with the egg wash and sprinkle with coarse sea salt.

Step 12

Bake the pretzels in the preheated oven for 12-15 minutes, or until they are golden brown.

Step 13

Remove the pretzels from the oven and allow them to cool on a wire rack for 5 minutes before serving. Enjoy with your favorite dipping sauce or on its own!
