Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.75 cup Unsalted butter
  • 3 Large eggs
  • 0.75 cup Whole milk
  • 2 teaspoons Pure vanilla extract
  • 0.5 teaspoons Almond extract
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.25 cup Powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin with cupcake liners.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the butter and sugar together using a hand mixer or stand mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.

Step 5

Mix in the vanilla extract and almond extract until well incorporated.

Step 6

Reduce the mixer speed to low and alternately add the dry ingredients in three additions and the milk in two additions, starting and ending with the dry ingredients. Mix until just combined and avoid overmixing.

Step 7

Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

Step 8

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a cake comes out clean.

Step 9

Allow the cakes to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 10

Once cooled, optionally dust the tops with powdered sugar for a light and sweet finish.

Step 11

Enjoy your Soft Lil Sarah Cakes as is or paired with your favorite tea or coffee!
